Step 1: Preheat Your Oven
Turn on your oven and set it to 375°F (190°C). This helps the chicken bake evenly and keeps the rice soft and fluffy.
Step 2: Prepare the Chicken
Cut the chicken breasts in half to make four even pieces. Rub each piece with salt, pepper, paprika, and a little olive oil. Set aside.
Step 3: Make the Rice Mix
In a mixing bowl, combine the uncooked rice, chopped onions, minced garlic, red bell pepper, cumin, chili powder, and diced tomatoes (with liquid). Pour in the chicken broth and stir it all together.
Step 4: Arrange in the Baking Dish
Pour the rice mixture into your greased baking dish. Lay the seasoned chicken pieces on top of the rice. Cover the dish tightly with aluminum foil.
Step 5: Bake the Dish
Place the dish in the oven and bake for 45 minutes. Don’t open the foil during baking. This helps steam the rice and cook the chicken evenly.
Step 6: Check and Serve
After 45 minutes, remove the foil and check if the rice is fluffy and the chicken is cooked. You can garnish with chopped parsley or cilantro for extra color and taste.
