Being a dad and a teacher, I don’t get much time to cook.  So I prefer easy meals that are still nutritious and tasty. With this nice grill from Traeger, I can cook some nice tasty food at the comfort of my house.  No matter the weather prevailing in Colorado at that particular time. There is always a way of mixing up stir-fried chicken and vegetables with added sweetness from pineapple.  Making it a perfect meal for any working family’s dinner scene at the end of the working week. Plus what makes the process even smoother is that we use fresh ingredients, bought from Safeway.

  • 4 tbsp Sig. Select Sweet Chili Sauce
  • 2 tablespoon garlic chili crunch – Signature Select
  • 1 tsp Sesame Seeds-O Organics
  • Signature Select Cooking Spray
  • Signature Select Soy Sauce
  • Soak the chicken and the veggies in the same marinade.

Step-by-Step

Marinate the Chicken: Remove the chicken from the wrapping and then place the cubes in a medium bowl. Add half part of the reserve of Select Sesame and Ginger Teriyaki marinade over the chicken and mix. By this time the tortillas should be warm then cover with a plastic wrap and placy for almost 30 minutes in the refrigerator.

Combine Ingredients: Heat up the chicken and vegetables in the griddle adding soy sauce on top depending on the preference. Finally fold in the chopped pineapple kept aside and continue to cook for further 2 minutes.

Assemble the Bowls: Take the brown rice and scoop it inside the pineapple bowls and fill it up to halfway. Frequently pour over with the chicken and vegetable stir-fry, sweet chili sauce and/or garlic chili crunch. Serving suggestion – Sieve the sesame seeds before garnishing the dish to ensure a smooth finish before serving.
