This creamy chicken pasta is anything but bland! We will be adding lots of seasonings, a few veggies, and some optional herbs for maximum flavor. Here is what you will need:

Boneless Skinless Chicken breasts – Use boneless skinless chicken breasts in this recipe the breast down to an even thickness so it cooks quickly and evenly. I will prefer the flavor of chicken thighs so use either.

Garlic – Fresh garlic cloves always if you can!

Cream –  Use single or light cream as I find the parmesan and cooking time thickens it perfectly. I think heavy cream can end up too thick once it is taken off the heat.

Parmesan cheese – Freshly grated with a micro plane or star side of a box grater. Pre grated parmesan is often full of additives and won’t melt into a sauce as well.

Fresh herbs – I think rosemary brings a lovely flavor to this dish.

Lemon Juice – Add fresh lemon juice of my creamy pasta sauces, it cuts through the richness perfectly.

Additions:

I wanted to keep this as a really simple base but it is crying out to be added to! Try any of these:

Toasted sliced mushrooms

Any fresh vegetables like broccoli, zucchini or green beans.

A big handful of fresh spinach

Some cooked crispy bacon pieces.

How to Make Creamy Chicken Pasta

Mix together the salt, pepper, garlic powder, smoked paprika, and cayenne. Sprinkle each chicken breast with seasoning, then use your hands to rub the seasoning into the chicken and make sure everything is coated.

Remove each chicken breast in flour and set them aside while you heat your butter and oil in a pan.

Cook the chicken on one side for 2-3 minutes, then flip and cook until done.

Place the cooked chicken on a plate and add your chopped onion to the pan.

Cook the onion until it softens, then add the garlic and cook until fragrant.

Slowly drizzle in the chicken broth and use a spatula to scrape any browned bits up from the bottom of the pan as you pour.

Add the heavy cream, remaining salt, and Italian seasoning. Stir very well. Let the mixture come to a simmer, then add your parmesan and cook until it melts into the sauce.

Test for any additional seasonings before adding your pasta and chicken to the sauce. Cook until the sauce is thickened and the pasta and chicken are warmed through. Garnish with fresh green herb if desired.

Expert tips

For a juicy chicken breast, flatten it into an even layer. Ensures even and perfect cooking.

The cream sauce should never be boiling just a really nice gentle simmer on a medium or even medium-low heat.

If using dried pasta, undercook it by a minute so it can bubble away IN the sauce for a minute or two at end and still be al dente.

Always reserve a mug of the starchy pasta water before draining. I like to try and time the pasta cooking and sauce so I can transfer the cooked pasta straight into the sauce. I use a spider strainer for this. Easy Creamy Chicken Pasta Recipe

WHAT TO SERVE WITH CHICKEN PASTA

A decent pasta should always have a side of Easy Cheesy Garlic Bread and a side of Easy Tomato Salad for some crispy, freshness.

Can I use milk instead of cream?

Whole milk might work, but it would definitely thin things out. I recommend sticking with cream for a perfectly thickened, velvety, chicken pasta sauce.
