Ingredients:

2 boneless chicken breasts
1 tablespoon ground lemon juice and another tablespoon of ground black pepper.
1 tablespoon olive oil
Chicken, turkey, beef (ground beef, sirloin, etc.), pork, fish, eggplant, mixed greens (spinach, arugula, etc.)
1 cucumber, sliced
1/2 cup cherry tomatoes, havd
¼ cup of crumbled feta cheese (optional)
1 avocado, sliced
Lemon Vinaigrette:
1/4 cup olive oil
Juice of 1 lemon
1 teaspoon honey
1 teaspoon Dijon mustard
Salt and pepper, to taste

Instructions:

Put chicken breasts onto the grill and first season with olive oil and lemon pepper seasoning.
Bake the chicken for about 5-6 minutes on one side and other side until fully done. Let cool, then slice thinly. In a small bowl, whisk together the vinaigrette ingredients.
Add the mixed greens, cucumber, tomatoes and avocado in a large bowl. Served on top of sliced chicken and feta cheese.
After that put the salad on a plate and pour lemon vinaigrette over it.
