Chicken baked with vegetables

Perfect for weeknights when you don’t have much time to spend in the kitchen – delicious chicken and roasted vegetables all in one pan.
Ingredients:
- 4 chicken breasts or thighs
- 2 tablespoons of lemon pepper seasoning
- 1 lemon, thinly sliced
- 2 tablespoons olive oil
- 2 carrots, chopped
- 1 bell pepper, sliced
- 1 red onion, quartered
- 1 pound baby potatoes, halved
- Salt and pepper, to taste
- Fresh thyme or rosemary, preferably fresh.
Instructions:
It is assumed that for this dish an oven preheat at the temperature of 400°F (200°C) is appropriate.
Drizzle the vegetables with olive oil, sprinkle with salt and pepper and lay in one layer on a baking sheet.
Next spread lemon pepper on the chicken and place the chicken on top of the vegetables. Throw in wedges of lemon and garnish with fresh herbs if preferred.
After 15-20 minutes turn them over and bake further 25-30 min., or until the chicken is coagulated and the vegetables are soft.
Care should be taken not to consume before resting for about five minutes after preparation.
