Chicken Tikka Masala Recipe is a classic curried dish with soft tender chunks of char-grilled chicken, cooked slowly briefly in a delicious and supper spicy gravy.  The dish consists of 2 components-first is Tikka and other is Masala, which is the gravy in which the tikkas cooked slowly.

How to Make Chicken Tikka Masala

Chicken Marinade

  1. Take chicken to 1 to 1 ½ inch pieces and add to a large mixing bowl. Pat dry with a few kitchen tissues to make sure there is no excess moisture. For this recipes you need about 1 or 1 ½ lbs. boneless chicken thighs or breasts. Add the following:
  • ½ to 1 red chilli powder
  • 1 teaspoon garam masala
  • ½ teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ¼ teaspoon turmic
  • ½ teaspoon salt
  1. Add 1 teaspoon lemon juice and 1 teaspoon oil. Try to avoid lime juice here.
  2. Add 1 teaspoon garlic and ginger paste and 1 teaspoon kasuri methi ( dried fenugreek leave)
  3. Add ½ Greek yogurt.
  4. Mix up all things well. Cover with a cling wrap and let it rest for a minimum 8 hours and up to 48 hours in refrigerator. If you are in a rush you may cook them after 3 hours but longer the butter as they really juicy.

Make the Tikka Sauce 

  1. Pour 3 tablespoon oil or ghee to a pan or pot. When it turns hot, add 1 ½ cups onions and sprinkle 1 teaspoon salt. Saute on a medium heat until they turn deep golden.
  2. Add 1 chopped green chilli and 1 teaspoon ginger and garlic paste. Cook for about 40 to 60 second until you being the smell garlic and ginger.
  3. Turn the heat to low add the following:
  • 1teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 2 teaspoon garam masala
  • 1 teaspoon cumin powder
  1. Cook well quickly. We don’t want to burn the spice.
  2. Immediately add the tomatoes. If you using fresh tomatoes you will chop or puree 500 grams ripe red tomatoes in a blender to a smooth puree. Or use 1 ¼ cup bottle tomatoes puree.
  3. Cook this on a medium to high heat stirring often until the masala thickens. This step takes some time cook down the tomatoes as the curry develops a flavor at this stage.
  4. Bring 1 to 2 cups of water to a rolling boil in another pot. Pour 1 or 2 cup of hot water. Give a good mix.
  5. Cover and cook on a low heat until the sauce become fragrant and thick.

Grill the Chicken Tikka

  1. While the Tikka masala cooks, grill your chicken tikka. Thread the chicken on to the skewers and place them on a prepared tray. Place the tray in the middle rack, in the preheated oven at 9 to 10 mins
  2. Later turn them with the help of tong and bake for another 9 to 10 minutes. If they look dry in between you can baste the tikka with the marinade. To char your chicken, broil for 2 minutes or until slightly charred.

 

To Air Fryer, place the tikka in your tray or basket. Air fry for 6 mins at 200C or 400 F. Trun them to the other side and air fry for another 6 mins.

To cook them on the pan, pour 1 tablespoon oil to a heavy bottom cast iron pan. When the pan is hot, you place the tikka in the pan one by one, spacing them apart. Cook on the other side until your chicken is almost cooked and charred.

 

Make Chicken Tikka Masala

  1. Pour ½ to ¾ cup heavy cream or thickened cream. Pore 2 to 3 tbsps water to the grinder and swirl gentle and pour that to the tikka masala.
  2. Add 1 to 2 sugar powder and give a good mix.
  3. Let it simmer until thick and aromatic.
  4. Add all of the grilled chicken tikka and 1 tablespoon kasuri methi. Make your curry has reached a thick and almost serving consistency before you add chicken. Taste and add some sugar, garam masala, salt if you required to need.
  5. Mix and cook covered, until the chicken is soft and tender. This takes only 2 to 3 mins.
  6. Garnish with 2 to 3 tablespoon of heavy cream and 3 tablespoon of chopped coriander leaves.

How to Serving:

Serve Chicken Tikka Masala with tandoori roti, Butter Naan, Paratha and rice. This mael goes well with salad, onion salad, amd sweet. Vegetarian dishes like Cabbage  and Bombay potatoes go well.

Expert Tips for Chicken Tikka Masala Recipe:

Blend us no blend: If using canned tomatoes I highly recommended blending the sauce as it really tones down the acidic flavor of the canned tomatoes.  But if using fresh tomatoes you simply blend and use.

Yogurt: You must use Greek yogurt in this recipes.  Because using the Greek yogurt is help you in marinade thick and spicy.

Cooking Tikka on Pan: If you want to cook tikka in pan, make sure you marinade is thick not runny.
